You're absolutely right. We had a few potatoes sprout after we missed them during harvest time, so they stayed in the ground over the winter. Problem was, they didn't really make new potatoes. But yes, I try to plant them deep enough for them to be safe. Like peas, they're quite hardy.
Haha, he's fine, I just moved him to an inter-bed path and explained it is the better place to roll around. I've also got more twigs to stick around the beans once they sprout, so it's all good. :)
Don't give up on the potatoes too early. They may resprout, especially if the sprout chunks you planted had multiple eyes on them.
Just another reason for planting potatoes really deeply -- it delays upward growth until the chances the weather up top is sincere about turning warm.
