Thank you! My experiments with rye flour tend to end up hard and quite dense. I haven't given up trying though. Sourdough is indeed a living thing although I have killed a few batches by forgetting to feed it during the summer...
A very good post. The only thing I can think of in terms of critique would be paragraphs -- maybe try to make them a bit shorter because a lot of people read the posts on their phones, I suspect. My general rule is one paragraph per one "thought train car". Good luck with the Substack!
It really is a labour of love, yes. And a very gratifying kind. As for the failures, I've never thrown a failed loaf away yet, even if it's got the consistency of a brick. They're always edible, however barely. :D
